  • 3 overripe bananas
  • 1 cup unsweetened almond milk or oat milk
  • ¼ cup melted vegan butter
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • a pinch of salt
  • 1 cup almond flour
  • 1 cup regular or gluten-free all purpose flour
  • 1 tablespoon cinnamon

How To Make French Toast Banana Bread

  • Begin by preheating the oven to 375. Line a loaf pan with parchment paper or grease it with non stick spray.
  • In a large mixing bowl, use a fork to mash the overripe bananas. Once they are mashed, add the non dairy milk, melted butter, maple syrup, vanilla, baking powder, baking soda, and salt. Mix in the almond flour and regular flour until a silky and lumpy batter forms.
  • Sprinkle the cinnamon on top of the batter and fold 3 or 4 times so there are swirls in the batter. Transfer the batter into your prepared loaf pan. Bake in the oven for 50-55 minutes or until the banana bread is golden brown.
  • Allow the french toast banana bread to cool until warm. Then, remove it from the loaf pan, dust with powdered sugar, and slice. Serve each slice spread with butter and drizzled with maple syrup.
