Gingerbread Banana Bread Ingredients

  • 2-3 overripe bananas, mashed use three bananas for a more dense and moist loaf
  • ¼ cup melted vegan butter regular butter will work if not vegan
  • ¾ cup maple syrup
  • 1 cup unsweetened oat milk or almond milk regular milk will work if not vegan
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 tablespoon molasses
  • 2 cups regular or gluten-free all purpose flour

Cream Cheese Frosting

  • ¾ cup powdered sugar
  • 2 oz vegan cream cheese regular cream cheese will work if not vegan
  • 2 tablespoon melted vegan butter regular butter will work if not vegan

How To Make Gingerbread Banana Bread

  • Begin by preheating the oven to 350. Grease a loaf pan with non-stick spray.
  • Using a fork, mash your overripe bananas in your large mixing bowl. Then, add the vegan butter, milk, vanilla, maple syrup, molasses, cinnamon, ginger, baking powder, and baking soda and mix. Add the flour and mix until a thick batter forms.
  • Transfer the batter into the greased loaf pan and bake in the oven for 45-50 minutes. Allow the loaf to cool for a few minutes and then remove it carefully from the pan.
  • To make the cream cheese frosting, us a whisk or electric hand mixer to mix the cream cheese, powdered sugar, and butter. Spread the icing over the loaf, slice, and serve.
