Begin by preheating the oven to 375. Line a loaf pan with parchment paper. Prepare your flax eggs in a small mixing bowl by mixing the flax seed meal and hot water together. Let this sit for 2 minutes until a thick gel forms.
Next, prepare the batter. In a large mixing bowl, mix the applesauce, melted vegan butter, almond milk, baking powder, baking soda, vanilla, and flax seed meal mixture together until the mixture is smooth. Add the oat flour and oats and mix until the batter is smooth.
Pour half of the batter into the loaf pan and spread evenly. Sprinkle the top with cinnamon and coconut sugar. Then, pour the rest of the batter on top.
In a medium sized mixing bowl, make the streusel topping by mixing the coconut sugar, flour, oats, and melted butter together. Pour this on top of the batter in the loaf pan. Bake for 45-50 minutes or until the loaf has completely risen and is golden brown.
Option to make a cream cheese frosting to go on top of your healthy coffee cake. To do this, mix the powdered sugar, melted vegan butter, and vegan cream cheese together until silky smooth. Drizzle it over the loaf before serving.
