For The Lemon Blueberry Donuts

  • 1 cup milk regular or plant-based
  • ¼ cup melted butter regular or plant-based
  • ½ cup lemon juice freshly squeezed or bottled
  • 1 cup organic cane sugar
  • 1 teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • 2 cups regular or gluten-free all purpose flour
  • 1 cup frozen wild blueberries fresh will also work

For The Cream Cheese Glaze

  • ¾ cup powdered sugar
  • 2 oz cream cheese regular or vegan
  • 2 tablespoon melted butter regular or vegan
  • 1 teaspoon vanilla
  • ½ cup frozen wild blueberries thawed

How To Make Baked Lemon Blueberry Donuts

  • Begin by preheating the oven to 350. Spray 16 silicone donut hole molds with non-stick spray.
  • In a mixing bowl, mix the milk, butter, lemon juice, and sugar. Add the baking powder and baking soda and mix. The mixture is going to begin to fizz and grow, so quickly add your flour and begin to mix until a smooth batter forms.
  • Fold in the blueberries and spoon the batter into 16 greased silicone donut molds. Bake in the oven for about 20 minutes or until they've completely risen.
  • Mix the cream cheese, melted butter, vanilla, and powdered sugar together to make the frosting. Then, use your hand mixer to mix the thawed blueberries in to turn the glaze blue.
  • Once your donuts are done baking, carefully remove them out of the silicone donut molds by flipping the molds over. Then, dip the donuts into the glaze and enjoy!
