Instructions
Easy Vegan Bread Pudding
Preheat the oven to 375. Grease a 9x11 casserole dish.
In a large bowl, mix the coconut milk, cinnamon, melted vegan butter, maple syrup, cornstarch, and vanilla together.
Cut up your bread into bite-sized pieces and toss the bread pieces into the custard. Transfer the soaked bread into a greased casserole dish. Option to top with pecans.
Bake the dish, covered with foil, for 30 minutes. Uncover and bake for another 5-7 minutes until the casserole is golden.
Serve topped with powdered sugar, banana slices, or drizzled with maple syrup.
