Gluten-Free Bread Pudding (French Toast Casserole)
Some people call it French Toast Casserole, some call it Bread Pudding .. I call it delicious! This dairy-free, egg-free, vegan and gluten-free friendly bread pudding is absolutely delicious and perfect for feeding a crowd. Everyone will love it and no one will guess it's vegan and gluten-free!
Ingredients
Easy Vegan Bread Pudding
- 1 can coconut milk 13.5 oz
- 2 teaspoon cinnamon
- 2 tablespoon melted vegan butter
- 2 tablespoon maple syrup
- 2 tablespoon cornstarch
- 1 teaspoon vanilla
- 10 slices thick sourdough bread I used Schar Gluten-Free Sourdough Bread
Optional Vegan Bread Pudding Toppings
- ½ cup pecans
- powdered sugar
- maple syrup
- ripe banana slices
Instructions
Easy Vegan Bread Pudding
- Preheat the oven to 375. Grease a 9x11 casserole dish.
- In a large bowl, mix the coconut milk, cinnamon, melted vegan butter, maple syrup, cornstarch, and vanilla together.
- Cut up your bread into bite-sized pieces and toss the bread pieces into the custard. Transfer the soaked bread into a greased casserole dish. Option to top with pecans.
- Bake the dish, covered with foil, for 30 minutes. Uncover and bake for another 5-7 minutes until the casserole is golden.
- Serve topped with powdered sugar, banana slices, or drizzled with maple syrup.
