Vegan Chicken Nachos Ingredients

  • 2 tablespoon olive oil
  • 1 pack Daring Vegan Chicken about 2 cups
  • 1 cup vegan shredded cheese
  • 1 cup canned black beans, rinsed and drained
  • ½ cup sliced cherry tomatoes
  • ¼ cup diced red onion
  • 1 avocado, sliced
  • 1 cup frozen and warmed corn or use canned corn that's been rinsed and drained
  • 2 cups corn tortilla chips

How To Make Vegan Chicken Nachos

  • Prepare your Daring Chicken (as instructed) in a skillet with olive oil and fry until golden brown. Before removing the chicken from the skillet, top it with the vegan cheese shreds and drizzle a little olive oil on top. This helps the vegan cheese melt. Cover the skillet with a lid for 1-2 minutes to allow the cheese to melt and then remove the entire skillet from the heat.
  • Plate your chips, top with black beans, lettuce, onion, tomatoes, and then add the cheesy chicken on top. Serve with avocado, guacamole, or salsa. Season with salt and pepper and enjoy warm.
