Mini Blueberry Crumble Ingredients

  • 2 cups frozen or fresh blueberries
  • 1 cup regular old fashioned oats or quick oats
  • 4 tablespoon sugar or 1 tablespoon of purecane sugar substitute
  • ¼ cup melted vegan butter or coconut oil

Optional Ingredients

  • 1 teaspoon vanilla
  • 1 tablespoon maple syrup
  • ½ teaspoon cinnamon
  • a pinch of salt only needed if using coconut oil instead of butter

Mini Blueberry Crumble Recipe

  • Begin by preheating your oven to 350. Grease 4 small ramekins with non stick baking spray.
  • Add about half a cup of blueberries into each ramekin. In a separate mixing bowl, mix the oats, melted vegan butter, and sugar together. Add the maple syrup, vanilla, and cinnamon if using. Spoon the crumble over the top of the blueberries.
  • Bake the ramekins in the oven for about 30 minutes or until the oatmeal crumble is golden and the blueberries are bubbling. Serve warm on it's own, drizzled with nut butter, or with a scoop on vegan yogurt or ice cream.
