Golden and buttery cobbler is baked over warm, gooey, cinnamon peaches. This amazing peach cobbler is divine! Made in minutes and with just a few simple ingredients. This is the perfect vegan dessert for any time of year! Everyone will love it and no one will guess it's vegan-friendly.
Begin by preheating the oven to 375. Grease your pie dish(s) and set aside.
Peel the peaches and then slice them in half to remove the pit. Once the pit is removed, slice the peaches into ⅓ inch thick slices. Leaving the peel on, slice the apple into ¼ inch thick slices.
Heat a large skillet or sauce pot to medium heat. Add the vegan butter and cook until it melts. Once the butter has melted, add the peach and apple slices. Add the brown sugar and cinnamon and cook, stirring, for about 3 minutes or until the apples and peaches are tender but not completely soft. Remove from the heat and set aside. If the peach filling is too watery, add 1-2 tablespoon of flour to thicken the sauce.
To make the cobbler, mix the melted vegan butter, plant-based milk, sugar, vanilla, and baking powder together. Once well combined, add the flour and oats and whisk until a cobbler batter is formed.
Transfer the caramelized fruit into your pie dish(s) and drizzle the cobbler over the top of the fruit. Bake in the oven for about 40-45 minutes or until the top of the cobbler is golden brown. Serve warm with vegan ice cream.
