Banana Spinach Pancake Ingredients

  • 2 overripe bananas
  • 2 cups old fashioned rolled oats
  • 1 ½ cup unsweetened almond or oat milk
  • 2 teaspoon baking powder
  • 1 cup fresh spinach
  • 1 teaspoon vanilla extract optional
  • 2 tablespoon maple syrup optional

Banana Spinach Pancake Recipe Instructions

  • To make the banana spinach pancakes, add the overripe bananas to a blender along with the oats, almond or oat milk, baking powder and spinach. Option to add vanilla and maple syrup for added flavor.
  • Blend the ingredients together until a smooth pancake batter is formed.
  • Heat your greased griddle or skillet to medium heat and pour about 3 tablespoon of batter per pancake. Cook until bubbles form on the tops of the pancakes and then flip. They should be golden brown. Continue to cook on the other side and then remove the pancakes from the skillet or griddle. Repeat this process until all of the banana spinach pancake batter has been used. you should have about 16 pancakes.
  • Top with your favorite pancake toppings such as: maple syrup, banana slices, fresh fruit, nut butter, or yogurt. Enjoy!
