Preheat the oven to 350. Then, make the apple filling. Bring a skillet with a tablespoon of vegan butter to medium heat. Once the butter has melted, add the thinly sliced apples, sugar, and cinnamon. Cook, stirring, for 10 minutes or until the apples are tender and soft. Remove the skillet from the heat. If the juice of the apples is runny, add 1-2 tablespoon of flour into the skillet to thicken the cobbler filling.
In a mixing bowl, make the cobbler batter by adding the milk, butter, maple syrup, baking powder, and vanilla together. Add the flour and oats and mix until smooth. Finally, mix in a pinch of salt.
