Frosted Zucchini Banana Bread Ingredients

  • 1 cup grated zucchini
  • 2 overripe mashed bananas
  • 1 cup organic cane sugar
  • ½ cup melted regular or vegan butter
  • ¾ cup regular, oat, or almond milk
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon optional
  • 1 teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • 1 cup oat flour
  • ¾ cup coconut flour

Cream Cheese Frosting

  • 1 ½ cup powdered sugar
  • 4 tablespoon melted regular or vegan butter
  • 4 oz regular or vegan cream cheese

Frosted Zucchini Banana Bread Instructions

  • Begin by preheating your oven to 375. Grease a metal loaf pan with non stick spray.
  • Grate your zucchini and add it to a bowl with your mashed bananas.
  • Then, add the sugar, milk, butter, vanilla, cinnamon, baking powder, and baking soda to the bowl. Mix well and then add your oat flour and coconut flour. Mix until a thick batter is formed.
  • Transfer the batter into the greased metal loaf pan and bake in the oven for 45-50 minutes.
  • While the zucchini banana bread bakes, prepare the cream cheese frosting by using an electric mixer or whisk to mix the powdered sugar, melted butter, and cream cheese together until smooth.
  • Frost the cooled loaf and enjoy either warm or cool.
