Ingredients
  

Iced Oatmeal Cookie Dough

  • 2 tablespoon flax seed meal
  • 4 tablespoon hot water
  • ½ cup melted vegan butter or regular butter if you're not vegan
  • 1 teaspoon baking powder
  • ¾ cup coconut sugar or brown sugar
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 cup oat flour
  • 1 tablespoon unsweetened oat or almond milk or regular milk if you're not vegan
  • 2 cups rolled oats

Cream Cheese Frosting

  • ¾ cup powdered sugar
  • 2 tablespoon melted vegan butter regular butter will also work
  • 2 oz vegan cream cheese regular cream cheese will also work

Vanilla Icing

  • 1 cup powdered sugar or powdered sugar substitute we used truvia
  • 2 tablespoon unsweetened almond or oat milk

How To Make Iced Oatmeal Cookes

  • Preheat the oven to 375. Line a baking sheet with parchment paper.
  • Prepare your flax eggs by mixing the flax seed meal and hot water together in a bowl. Let the mixture sit for 2 minutes until a gel forms. If you're using a regular egg in this recipe instead of flax eggs, skip this step.
  • In a large mixing bowl, mix the melted vegan butter, baking powder, brown sugar, salt, vanilla, cinnamon, nutmeg, and flax eggs together. Add the flour and oats and mix until a batter forms.
  • Scoop the cookie dough onto your baking sheet and then bake the cookies in the oven to 8-9 minutes. Once they're done baking, remove them and allow them to cool completely before frosting.
  • Choose between cream cheese frosting or vanilla frosting. Simply mix the ingredients together and drizzle it over the cookies!
