  • 1 teaspoon vanilla extract
  • 1 ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ teaspoon nutmeg
  • 1 ¼ cup oat flour
  • 1 tablespoon unsweetened oat or almond milk (or regular milk for non-vegan)
  • 1 ¼ cup rolled oats

Vanilla Icing:

  • 1 cup powdered sugar (or powdered sugar substitute, such as Truvia)
  • 2 tablespoon unsweetened almond or oat milk

Cream Cheese Icing:

  • ¾ cup powdered sugar

How To Make Iced Oatmeal Cookies

Step 1: Preheat the oven to 375°F. Line a baking sheet with parchment paper.

Step 2: Prepare flax eggs by mixing flax seed meal and hot water in a bowl. Let it sit for 2 minutes until a gel forms. Skip this step if using a regular egg.

Step 3: In a large mixing bowl, combine melted vegan butter, baking powder, brown sugar, salt, vanilla, cinnamon, nutmeg, and flax eggs. Add flour and oats, then mix until a batter forms.
