  • 1 teaspoon vanilla

  • 1 teaspoon baking powder
  • 1 ½ teaspoon pumpkin pie spice
  • 1 ½ cup quick oats
  • 1 ½ cup regular or gluten-free all purpose flour
  • 1 cup chocolate chips regular or vegan

  • Begin by preheating the oven to 375. Grease your metal loaf pan with non-stick spray or line it with parchment paper.
  • Begin by adding the pumpkin puree, milk, butter, maple syrup, and vanilla together into a bowl. Add the baking soda, baking powder, and pumpkin pie spice. Mix and then add the flour and oats. Mix until an oatmeal batter is formed and then fold in your chocolate chips.
  • Pour the batter into the prepared loaf pan and bake in the oven for 40-45 minutes or until the bread has completely cooked through the center.
