These Blueberry Blender Baked Oats are as easy to make as they are healthy, filling, and delicious! Filled with wholesome ingredients like oats, berries, and flax seed meal - this is a vegan and gluten free friendly breakfast that will curb your sweet tooth and keep you feeling full! I used purecane sugar substitute in place of regular sugar in this recipe for an even lighter treat!
1cupfrozen wild blueberriesfresh blueberries will also work
1cupregular unsweetened almond or oat milkor regular milk if not vegan
⅓cupcane sugar or purecane sugar substitute
2tablespoonmelted vegan butteror regular butter if not vegan
2tablespoonmaple syrup
2tablespoonflax seed meal

1 ½cupold fashioned rolled oats
1tablespoonpeanut butteroptional
Vanilla Icing
½cuppowdered sugar or purecane powdered sugar
1tablespoonunsweetened oat or almond milkregular milk will work if not vegan
1teaspoonvanilla

Blueberry Blender Baked Oats Instructions
Preheat the oven to 350.
Add the oats, frozen blueberries, milk, melted butter, sugar, maple syrup, flax seed meal, vanilla, cinnamon, and baking powder to a blender. Blend for about 15-20 seconds, or until the contents are well combined and a smooth batter has formed. For added protein and flavor - add a scoop of peanut butter into the batter and blend for a few more minutes.
Fill 4 greased ramekins with the batter and bake in the oven for 30-35 minutes or until the oats have risen completely.
While the oats are baking, whisk to mix together the powdered sugar, milk, and vanilla extract to make the icing. Allow the oats to cool for a few minutes, drizzle the icing on top, and serve warm.
Icing is optional and I've also enjoyed this topped with nut butter in place of the icing.
