Vegan Blender Baked Blueberry Oatmeal
These vegan blender baked oats are as easy to make as they are healthy, filling, and delicious! Filled with wholesome ingredients like oats, berries, and flax seed meal - this is a vegan and gluten free breakfast that will curb your sweet tooth and keep you feeling full! I used purecane's 1:1 sugar subsitute in place of regular sugar in this recipe for an even healthier treat!
Ingredients
Vegan Blender Baked Blueberry Oatmeal
- 1 cup frozen wild blueberries
- 1 cup regular unsweetened almond or oat milk
- ⅓ cup cane sugar or purecane 1:1 sugar substitute
- 2 tablespoon maple syrup
- 2 tablespoon flax seed meal
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon baking powder
- 1 ½ cup old fashioned rolled oats
- 1-2 tablespoon peanut butter
Vegan Vanilla Icing (optional)
- ½ cup powdered sugar or purecane confectioners sugar
- 1 tablespoon almond milk
- 1 teaspoon vanilla
Instructions
Vegan Blender Baked Blueberry Oatmeal
- Preheat the oven to 350.
- Add the oats, frozen blueberries, oat milk, sugar or purecane, maple syrup, flax seed meal, vanilla, cinnamon (if using) and baking powder to a blender. Blend for about 15-20 seconds, or until the contents are well combined and a smooth batter has formed. For added protein, healthy fats, and flavor - option to add a scoop of peanut butter into the batter and blend for a few more minutes. Fill 4 greased ramekins with the batter and bake in the oven for 30-35 minutes or until the oats have risen completely.
- While the oats are baking, option to use a whisk to mix together the powdered sugar or purecane confectioners sugar, almond milk, and vanilla to make the icing drizzle. Allow the oats to cool for a few minutes, drizzle the icing on top, and serve warm.
- Icing is optional and I've also enjoyed this topped with nut butter in place of the icing.
