My boyfriend and I were craving a healthy dessert to enjoy on a warm summer Friday! We had a bottle of of Giesen 0% Sauvignon Blanc and another bottle of Estate Sauvignon Blanc and we wanted to pair our sweet treat with this light, crisp, and refreshing wine. The vibrant flavors of peach and strawberries are the perfect complement to Giesen Wines and the strawberry peach cobbler definitely hit the spot!

Ingredients
  

Gluten-Free Strawberry Peach Cobbler Filling

  • 1 ½ cups fresh strawberries, sliced into quarters
  • 2 peaches or nectarines, cored and diced
  • 1 tablespoon melted vegan butter
  • 4 tablespoon agave

Gluten-Free Strawberry Cobbler Batter

  • 2 tablespoon melted vegan butter
  • 1 cup old fashioned rolled oats
  • cup almond milk or oat milk
  • ½ cup regular or gluten-free all purpose flour
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • 3 tablespoon agave

How To Make Healthy Strawberry Peach Cobbler

  • Begin by slicing the strawberries and peaches. Then, grease a pie dish with baking spray. Preheat the oven to 350.
  • Bring a large skillet with 1 tablespoon of vegan butter to medium heat. Once the butter has melted, add the berries, peaches, and agave. Cook, stirring, for 5-7 minutes or until the berries have softened.
  • Transfer the berries and peaches into the greased pie dish. Then, in a separate mixing bowl, add the melted vegan butter, oats, milk, cinnamon, baking powder, and agave. Mix well and then add the flour. Mix until a thick oatmeal cobbler batter is formed. Then, pour or scoop the cobbler batter over the berries and peaches.
  • Bake the cobbler in the oven for about 15 minutes or until the oats are cooked. Then, broil for 1-2 minutes at the end to give the cobbler more color. Enjoy warm topped with vegan vanilla ice cream.
