  • 3 ripe bananas, mashed
  • ¾ cup sweet potato puree
  • ½ cup melted butter regular or vegan
  • 1 cup milk regular or plant-based
  • ¾ cup maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • salt
  • 1 cup rolled old fashioned oats
  • 2 cups regular or gluten-free all purpose flour

For The Cinnamon Swirl

  • 1 teaspoon cinnamon
  • ¼ cup coconut sugar or brown sugar

For The Icing

  • 1 cup powdered sugar
  • 2 tablespoon almond milk
  • 1 teaspoon vanilla

Sweet Potato Cinnamon Swirl Banana Bread Recipe Instructions

  • Begin by preheating your oven to 375. Grease your loaf pan with non stick spray or line it with parchment paper.
  • In a large bowl, mix your mashed bananas, sweet potato, maple syrup, butter, milk, cinnamon, baking powder, and baking soda together. Add a pinch of salt.
  • Add your oats and flour and mix until the batter is well combined. Pour half of your batter into the loaf pan. Top with cinnamon and brown sugar or coconut sugar. Pour the remaining batter on top. Use a fork or spoon to create swirls (just a few) in the batter.
  • Bake the loaf in the oven for 50 minutes or until you can stick a fork into the center and it comes out clean. While it bakes, make your frosting by whisking the powdered sugar, milk, and vanilla together. Then allow your loaf to cool before drizzling the frosting on top. Enjoy!
