Easy Vegan Sugar Cookie Blondies
These moist sugar cookie blondies are absolutely perfect! They're buttery, sugary, crisp on the edges, and gooey in the center. Everyone is going to love these and no one will believe they are vegan and gluten free (optional). You only need a few simple ingredients and 30 minutes. Be prepared for your kitchen to smell amazing and to completely lose control around a batch of these delicious vegan blondies!
Ingredients
Vegan Sugar Cookie Blondies
- 4 tablespoon flax seed meal
- ½ cup warm water
- 1 cup melted vegan butter
- 1 cup sugar
- 2 teaspoon vanilla
- 1 ½ teaspoon baking powder
- 2 tablespoon unsweetened almond or oat milk
- ¼ teaspoon salt
- 1 ½ cup regular or gluten-free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.

Vegan Cream Cheese Frosting
- 4 tablespoon softened vegan butter
- 4 oz vegan cream cheese
- 1 ½ cup powdered sugar
Instructions
Vegan Blondies
- Preheat the oven to 400. In a large mixing bowl, mix the flax seed meal with the warm water. Let it sit for 2 minutes until a gel forms.
- Add the melted vegan butter, vanilla, sugar, almond milk, and salt to the bowl. Mix until smooth. Then, mix in the flour until a thick batter forms. I find that 1 ½ cups of flour is perfect in this recipe, but for even gooier blondies, try using only 1 ¼ cup of flour!
- Transfer the batter into a 9x11 casserole dish that has been generously sprayed with nonstick spray. Option to sprinkle the top of the batter with more sugar or leave plain.
- Bake in the oven for about 25 minutes or until the blondies are golden and crisp around the edges while soft and gooey in the center. Let them cool before slicing and serving.
Vegan Cream Cheese Frosting
- There's no secret that this vegan cream cheese frosting is my favorite topping for almost any of my desserts! While the blondies are baking, use an electric hand mixer to mix the powdered sugar, softened vegan butter, and vegan cream cheese together. Allow the blondies to cool before frosting and sprinkling with colorful sprinkles.

I use Bobs Red Mill egg replacer instead of flax eggs. Can you please tell me how many “eggs” are needed in this recipe?

I have never made these with egg replacer or real eggs but I would probably use 1 full egg and one yolk if I was using real eggs ... So perhaps 1 1/2 servings of the egg replacer? Hope this is helpful!
