When I first started following a plant-based diet, I was overwhelmed whenever I searched for a new recipe. I had never heard of so many of the ingredients in many recipes and I knew for a fact that my family would be turned away by that! My husband is a picky eater and so are my parents and siblings. So, I started coming up with my own recipes. I tried to make them simple, affordable, and use “normal” ingredients like oatmeal and almond milk!
And, that’s how Peanut Butter and Jilly was conceived. I realized that cooking and baking gluten-free or vegan doesn’t mean it has to be complicated or lacking in flavor. In fact, it can be FUN, EASY, and ABSOLUTELY DELICIOUS! My recipes are almost always family-friendly (inspired by my own family’s picky palate), vegans and non vegans can enjoy them, and they are dang yummy! I grew up in the south so I am inspired by the foods I grew up eating!
