Chocolate Banana Baked Oatmeal with Peanut Butter
- 2 mashed overripe bananas
- 1 cup almond or oat milk
- ¼ cup maple syrup
- 3 tablespoon melted vegan butter
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 ½ cup quick oats
- ¼ cup cocoa powder
- ¼ cup vegan chocolate chips
- 2 tablespoon melted peanut butter
Instructions
Chocolate Banana Baked Oatmeal with Peanut Butter
- Preheat oven to 375
- In a large mixing bowl, use a fork to mash 2 overripe bananas. Add almond or oat milk, maple syrup, and vanilla.
- Mix in cocoa powder, then mix in oats. Finally, fold in chocolate chips. Pour the batter into a greased 9x11 casserole dish and bake for about about 25-30 minutes until the oats are fluffy.
- If using, melt the peanut butter in the microwave for about 30 seconds and drizzle it over the top of the baked oats.
