Vegan Strawberry Shortcake

This easy vegan strawberry shortcake recipe features a moist vanilla cake, naturally sweet strawberries, and dairy-free whipped cream for a classic treat.

Vegan Strawberry Shortcake Recipe

Ingredients

Vanilla Cake:

  • ⅓ cup melted butter (regular or vegan)
  • 1 ¼ cups milk (regular or plant-based)
  • 1 cup organic cane sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 ¾ cups regular or gluten-free all-purpose flour

Macerated Strawberries:

  • 2 cups sliced strawberries
  • ¼ cup organic cane sugar

Topping:

  • 2 cups whipped cream (regular or vegan)

Instructions

Step 1: At least 1 hour before serving (ideally overnight), prepare the macerated strawberries by mixing sliced strawberries and sugar in a glass container. Refrigerate.

Step 2: Preheat oven to 350°F (175°C). Grease three small (6-7 inch) or two standard (8-9 inch) cake pans with non-stick spray.

Step 3: In a large bowl, whisk together melted butter, milk, sugar, vanilla, baking powder, and baking soda.

Step 4: Add flour and mix until batter is smooth.

Step 5: Divide batter evenly among cake pans. Bake for 20 minutes or until a toothpick inserted into the center comes out clean and tops are lightly golden.

Step 6: Remove cakes from pans and cool completely on a wire rack.

Step 7: Once cooled, stack cake layers with whipped cream between each layer. Top with remaining whipped cream and macerated strawberries. Serve immediately.

How To Make Vegan Strawberry Shortcake

  • At least one hour prior to serving but ideally overnight, prepare your macerated strawberries. You can do this by placing your thinly sliced strawberries into a glass storage container and mixing them with the sugar. Refrigerate for 1 hour or up to 24 hours.
  • Begin by preheating your oven to 350. Grease three small cake rounds or two standard cake round pans with non-stick baking spray.
  • In a large mixing bowl, combine melted butter, milk, sugar, vanilla, baking powder, and baking soda. Then, add flour and mix until the vanilla cake batter is smooth. Transfer the batter evenly into your cake rounds. Bake them in the oven for 20 minutes or until they are completely cooked through the center and lightly golden on the top.
  • Once the cakes are done baking, carefully remove them from the baking pans and place them on a wire rack to cool. Once they are completely cooled, you can stack the rounds with a layer of cold whipped cream in between each layer. Top the cake with more whipped cream and the macerated strawberries and then serve immediately.
