Instructions

  1. Preheat the Oven
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners and lightly spray them with non-stick baking spray.
  2. Make the Batter
In a large mixing bowl, whisk together the applesauce, milk, melted butter, maple syrup, brown sugar, apple cider vinegar, vanilla, salt, cinnamon, baking powder, and baking soda. Add the flour and stir until a smooth batter forms.
  3. Add the Filling Layer

  6. Cool and Glaze (Optional)
Let the muffins cool slightly. If desired, whisk together the icing ingredients and drizzle over the tops. Serve warm or at room temperature.

Frequently Asked Questions

Can I use fresh apples instead of applesauce?

You can! Replace the applesauce with ¾ cup of finely grated apple for a chunkier texture and stronger apple flavor.

How do I store these?

Store at room temperature for up to 3 days or refrigerate for up to 5. They also freeze well for up to 3 months.

Can I bake these as mini muffins or a loaf instead?

Yes. For mini muffins, reduce the baking time to 15–18 minutes. For a loaf, bake in a greased 9×5-inch pan for 45–50 minutes on 375.
