August is one of my favorite months of the year. Summer is in full swing which usually means plenty of outdoor activities spent with friends and family. It also happens to be the month of my birthday! This summer has been a whirlwind, and I've done more baking and cooking than I ever have. There's nothing that brings me more joy than sharing a tasty treat with the ones I love.
I began to think about what a blessing it is to be able to enjoy food every day. I thought about what a luxury it is to prepare meals that are low calorie, simple, healthy (ish), and delicious. How fortunate I am to get to enjoy the foods I love, and be picky about the ingredients that go into them and preparation methods I use. And, I feel so thankful to get to share my recipes with you all! I started to think about how so many people in the world don't have the opportunity to be as specific with their diet. 820 million people are hungry around the world. And, to think... here I am, choosing between soy milk and almond milk... all purpose flour and oat flour... organic and non organic.
Vegan, Vegetarian, Gluten-Free, Paleo, Keto, etc. If you're one of the lucky few (like me) who get to make decisions about your health and nutrition, I urge you to take a moment today to feel gratitude. Sometimes, we get so consumed in the ups and downs of daily life, the disarray of the world, or our own personal crises, that we forget that if we have shelter, food, and someone to love... we are blessed. More blessed than most.
Today and this month, I'd like to highlight an organization called Project Healthy Children. Hunger is a global crisis. And, so is malnutrition. 16,000 children die every day from malnutrition. PHC's goal is to fortify foods with vital vitamins and nutrients for mothers and children who are at risk for malnutrition. Look around and if you're enjoying it with people you love, let them know you're thankful for them too.
