I'm still dreaming of the Chilaquiles I enjoyed at the Los Poblanos Historic Inn and and Organic Farm in Albuquerque, New Mexico. It's been months since our quick visit but it certainly made an impact. My boyfriend and I were on a camping trip and stopped along the way to see Los Poblanos and have a quick bite. The Los Poblanos property is lovely - with a charming inn, an on-site spa, several dining options, a quaint gift shop, and some adorable photo opportunities!

Los Poblanos is known for their beautiful Lavender Farm and luxurious accomodations. Since we were on a tight schedule, we only had time to stop in for brunch! And just as you'd expect, it was truly a delicious experience!

Brunch At Campo
Campo is known for their casually elevated dining experience and renowned "field-to-fork" (think farm-to-table) menu. Their brunch usually requires a reservation, but luckily they were kind enough to squeeze us in without one. As someone who is currently following a plant-forward diet, I was a little concerned about eating at a restaurant where I had never even seen the menu! Our server (wish I could remember her name) was more than willing to help me navigate the menu, make recommendations, and even offered to request modifications to some of the dishes to meet my dietary requests.
The Best Chilaquiles

The star of the show! These Chilaquiles were good enough to write home about ... and post on my blog about! I requested no cheese and asked for eggs and meat on the side. I ate the eggs and my boyfriend happily enjoyed the side of meat along with his Eggs Benedict (which he loved and highly recommends).
The Chilaquiles were nothing short of perfection and I left the restaurant very full and satisfied. The flavorful chips had the perfect amount of sauce but still remained crisp. Not one chip was mushy and each bite was delicious. The beans were a wonderful addition, and the crispy seasoned potatoes were out of this world. I told my boyfriend they must sprinkle magic dust on them because the flavor was so good! I later learned that they sell their seasoning salt at their gift shop!
It was my boyfriend's idea to stop in at Campo! He knows the best places to eat!
I couldn't bring this article to a close without mentioning the Lavender Lattes we enjoyed. My boyfriend had his with whole milk and I went with oat milk. They were outstanding! Thanks for reading!
