Equipment

  • Mixing bowls
  • Whisk or spoon
  • 9x9-inch metal baking pan
  • Kitchen towel
  • Measuring cups and spoons

Ingredients

For the Focaccia Bread

  • 1 cup warm water
  • ¼ cup melted butter (regular or vegan) or olive oil
  • 1½ teaspoon active dry yeast
  • 2 cups all-purpose flour (use gluten-free 1:1 flour if needed)
  • Olive oil (or avocado oil for a milder flavor), for greasing and brushing

For the Cinnamon Sugar Topping

  • ¼ cup cane sugar
  • 1 teaspoon ground cinnamon

For the Icing

  • 1 cup powdered sugar
  • 1 tablespoon milk (any plant-based or dairy milk)
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter (regular or vegan)

Instructions

Step 1: Make the Focaccia Dough
In a large bowl, whisk together the warm water, melted butter or oil, and active dry yeast. Let it sit for 5 minutes until foamy—this means the yeast is active.

Step 2: Form the Dough
Add the flour to the yeast mixture and stir until a sticky dough forms. Cover the bowl with a clean kitchen towel and let it rise in a warm spot for 1 hour. The dough should double in size.

Step 3: Shape and Rest
Preheat your oven to 350°F (175°C). Grease a 9x9-inch metal baking pan with olive or avocado oil. Transfer the dough to the pan, drizzle a bit more oil on top, and use your hands to press the dough out to the edges and corners. Let it rest and rise covered with a towel for another 15-30 minutes.

Step 4: Dimple the Dough & Bake
Use your fingers to gently press into the dough to create that signature focaccia texture. Bake for 30 minutes, or until golden brown.

Step 5: Add Toppings
While the focaccia bakes, mix the cinnamon and sugar together in a small bowl. In a separate bowl, whisk together the powdered sugar, vanilla, milk, and melted butter to make the icing.

Step 6: Finish and Serve
Once baked, remove the bread from the oven. Brush the top with more melted butter or oil. Sprinkle with cinnamon sugar and drizzle generously with icing. Enjoy warm!

How To Make Cinnamon Sugar Focaccia Bread

  • Begin by preparing the focaccia bread dough. In a large mixing bowl, add the warm water, melted butter, and active dry yeast. Mix once or twice and then allow the mixture to sit for 5 minutes until the yeast is active. You will know it is active when it begins to foam.
  • Add the flour to the bowl and mix until a thick dough is formed. Cover the dough with a thin kitchen towel and allow it to sit in a warm place in your kitchen for one hour. It should double in size.
  • Remove the kitchen towel and transfer the dough into a well oiled metal pan. We used a 9x9 square pan. Oil the top of the dough and then use your hands to evenly distribute the dough in the pan so it touches all of the edges and corners. Let it rest and rise covered with a towel for another 15-30 minutes. Use your fingers to press down and create divots in the dough.
  • Preheat the oven to 350F. Bake the focaccia dough in the oven for 30 minutes. It will be golden brown on top when it's done.
  • While the focaccia is baking, prepare the cinnamon sugar mixture by mixing the cinnamon and sugar together. Then, prepare the icing by mixing the powdered sugar, milk, vanilla, and butter together until smooth and silky.
  • Remove the focaccia bread from the oven and brush with more oil or melted butter. Then, top with the cinnamon sugar and drizzle with the frosting. Enjoy warm.
