Ingredients

  • 2 flax eggs (2 tablespoon flaxseed meal + 4 tablespoon hot water) or 1 regular egg
  • ½ cup melted vegan butter
  • 1 cup sugar (or ½ cup Purecane sugar substitute)
  • 1 tablespoon unsweetened almond or oat milk
  • ¼ teaspoon salt
  • 1 ½ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ¼ cup cocoa powder
  • 2+ teaspoon red food coloring (adjust to desired color)
  • ½ cup vegan chocolate chips
  • 1 cup all-purpose flour (regular or gluten-free; use King Arthur Measure for Measure for best results)

For the Vegan Cream Cheese Frosting:

  • ¾ cup powdered sugar (or Purecane powdered sugar substitute)
  • 2 tablespoon vegan cream cheese
  • 2 tablespoon softened vegan butter
  • Pink and red sprinkles (optional)

Instructions

Make the Brownies:

  1. Preheat & Prep Flax Eggs:
    Preheat the oven to 375°F (190°C). In a small bowl, mix flaxseed meal with hot water and let sit for 2 minutes until it thickens.
  2. Mix Wet Ingredients:
    In a large bowl, whisk together the melted vegan butter, flax eggs (or regular egg), sugar (or sugar substitute), almond milk, baking powder, vanilla, and cocoa powder.
  3. Add Color & Dry Ingredients:
    Stir in red food coloring (starting with 2 teaspoon and adding more as needed). Add a pinch of salt, then mix in the flour until just combined. Fold in the chocolate chips.
  4. Bake:
    Transfer the batter to a greased 9x11-inch baking dish and spread evenly. Bake for 30 minutes, or until the edges are set and slightly crisp.

Make the Frosting:

  1. Whip the Frosting:
    While the brownies bake, use an electric mixer to beat the powdered sugar, vegan cream cheese, and softened butter until smooth.
  2. Cool, Frost & Serve:
    Let the brownies cool completely before slicing into 16 squares. Frost each brownie and top with sprinkles if desired.

  • 1 cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.

  • ¾ cup powdered sugar
  • 2 tablespoon vegan cream cheese or regular cream cheese
  • 2 tablespoon softened vegan butter or regular butter

Easy Vegan Red Velvet Brownies Instructions

  • Preheat the oven to 375. Prepare the flax eggs by mixing 2 tablespoon of flax seed meal with 4 tablespoon hot water. Set aside for 2 minutes until a gel forms.
  • Use a fork to mix the flax seed meal with the melted vegan butter, sugar, almond milk, baking powder, vanilla, and cocoa powder. Add the red food coloring, starting with 2 teaspoon and adding more to reach desired red color. Add a pinch of salt if and mix in the flour. Fold in the vegan chocolate chips and transfer the batter into a greased 9x11 ceramic baking dish. Bake for 25-30 minutes or until the brownies are browned around the edges.
  • While the brownies are baking, use an electric hand mixer to mix the powdered sugar, vegan cream cheese, and vegan butter. Allow the brownies to cool before slicing them into about 16 brownies, and frosting them. Serve topped with sprinkles.
