Easy Cinnamon Vegan Pumpkin Waffles
You only need one bowl, 15 minutes, and 8 simple ingredients to whip up a batch of these vegan pumpkin waffles that are crisp on the outside and soft on the inside. Ingredients
Easy Cinnamon Vegan Pumpkin Waffles
- 1 cup unsweetened almond or oat milk
- ¾ cup pumpkin puree
- 2 tablespoon melted vegan butter
- 2 tablespoon coconut sugar
- 2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
Instructions
Easy Cinnamon Vegan Pumpkin Waffles
- Mix the almond milk, pumpkin puree, melted butter, sugar, baking powder, cinnamon, and vanilla together. Then, mix in the flour until a batter forms.
- Heat the waffle iron to medium heat and spoon on about 3 tablespoon of batter per waffle. Cook until golden on each side and serve immediately.

I would actually give this 4 1/2 stars. I bought a pack of organic pure pumpkin purée from Costco and was looking for ways to use it. The only thing I changed to the recipe was I added 1/4 teaspoon of fine sea salt.
