- Milk: To keep this recipe vegan, we use unsweetened almond or oat milk to make the pancake batter. If you're not vegan or dairy-free, regular milk will work.
- Sugar: We used organic cane sugar to sweeten the batter. You may substitute maple syrup, brown sugar, coconut sugar, or agave.
- Baking Powder: Because this recipe requires no eggs, we use baking powder to help the pancakes rise and get super fluffy.
- Vanilla: Vanilla extract gives the pancakes a warm sweet flavor.
- Flour: We recommend using regular or gluten-free all purpose flour to make the pancakes. Our gluten-free flour of choice is King Arthur Measure for Measure.
- Sprinkles: Any rainbow sprinkles will work. Be sure to check the label to ensure the sprinkles are vegan or gluten-free if needed.
For The Vegan Cream Cheese Frosting
- Butter: To make the vegan cream cheese frosting that get's drizzled over the funfetti pancakes, we start with melted vegan butter. If you're not vegan or dairy-free, regular butter will work.
- Cream Cheese: Use regular or vegan cream cheese to give the frosting a rich flavor.
- Powdered Sugar: We use powdered sugar to sweeten and thicken our icing.
How To Make This Recipe
Step 1: Begin by mixing the almond or oat milk, sugar, baking powder, and vanilla together in a medium sized mixing bowl. Then, add the flour and mix until a smooth batter forms. Be careful not to over-mix the batter. Fold in the sprinkles.
Step 2: Bring a skillet to medium heat and spray with non stick spray or grease with butter or oil. Fry about 2-3 tablespoon of pancake batter per pancake. Cook each pancake until bubbles form on the tops and then flip. They should be golden brown. Remove from the heat. Repeat until all of the pancake batter has been used.
Step 3: Before serving, use an electric hand mixer to mix the melted vegan butter, cream cheese, and powdered sugar to make the icing. If it's too thick, add a splash of almond or oat milk until it's thin enough to drizzle. Ice the pancakes and them sprinkle rainbow sprinkles on top. Enjoy!

- 2 tablespoon sugar
- 2 teaspoon baking powder
- 1 teaspoon vanilla

- 3 tablespoon rainbow sprinkles
Icing
- 2 tablespoon melted vegan butter
- 2 oz vegan cream cheese
- ¾ cup powdered sugar

- In one bowl, mix the sugar, baking powder, almond or oat milk, and vanilla. Then, whisk in the flour until the batter is smooth.
- Heat a non stick skillet to medium heat on the stove. Spray with cooking oil or use vegan butter to coat the pan.
- Once the oil or butter is hot, spoon in about 3 tablespoon of batter per pancake. Then, sprinkle in a sprinkles the top of the batter. Cook until bubbles form in the pancakes and then flip. It should be golden browned.
- To make your cream cheese icing, mix the melted butter, cream cheese, and powdered sugar. If the icing is too thick, you can add a splash of almond milk to thin it out so it's pourable or simply melt it in the microwave before pouring it over the pancakes.
