These delicious and filling muffins are made with baked oatmeal and chocolate chips! They are the perfect healthy vegan and gluten free breakfast!

Ingredients
  

  • 2 tablespoon melted vegan butter
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 ¼ cup almond or oat milk
  • 2 ½ cup quick oats
  • ½ cup vegan chocolate chips

Instructions
 

  • Preheat oven to 375
  • In a large bowl, mix melted vegan butter, maple syrup, vanilla, baking powder, baking soda, and almond or oat milk until completely combined. Then, add 2 cups of quick oats and mix. Finally, fold in chocolate chips.
  • Pour the batter into 6-8 lined muffin cups and bake for about 20 minutes.

    Is 1 tbsp of baking soda correct? I made these last night and the taste is very... off. I am sad because I was looking forward to these and made them for a friend, but when I tried one it was gross. What did I do wrong?

      Absolutely! I would add 1/3 cup. Should make them super moist!
