Easy Guacamole Salad
This Mexican inspired salad is the perfect healthy and hearty lunch to power you through the day!
Ingredients
- 4 cup lettuce
- 1 cup canned black beans
Guacamole
- 1 avocado, mashed
- ¼ cup diced red onion
- ¼ cup diced cherry tomatoes
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ½ lime, juiced
- ¼ teaspoon salt
Agave and Lime Dressing
- 2 tablespoon lime juice
- 2 tablespoon olive oil
- 1 teaspoon agave syrup
Instructions
- Mash avocado, mix with onion, tomatoes, seasonings, and lime juice. Serve half of the mixture over 2 cups of lettuce and ½ cup of black beans.
