Two of my favorite flavors merged into one incredible cookie. Vegan chocolate chip cookies made with pumpkin puree. These pumpkin chocolate chip cookies are melt in your mouth fantastic and loaded with ooey gooey chocolates!! This recipe is so easy and no one will guess it's vegan and gluten free. The cookies are fluffy, soft, chewy, and so delicious. Follow 3 simple steps and in 15 minutes, you will have a batch of cookies that everyone will love.

Preheat the oven to 425.

Mix the pumpkin puree, sugar, vegan butter, almond milk, baking powder, vanilla, cinnamon, nutmeg, and salt together. Then, add the flour and mix until a thick dough forms. Fold in the vegan chocolate chips, adding as little as 1/2 cup and up to 3/4 cup.

Line a baking sheet with parchment paper and use a tablespoon to scoop the cookie dough onto the baking sheet. Use your fingers to press them down into 1 1/2 inch thick circles. Bake the cookies in the oven for 9-10 minutes. Enjoy!!
