Spinach Salad with Raspberry Lime Dressing
This vibrant spinach salad is loaded with delicious berries, nuts, and apples! Served with delicious homemade raspberry lime dressing!
- 2 cup fresh spinach
- 1 cup blackberries
- 2 tablespoon walnuts
- ½ cup apple slices
- 1 cup frozen raspberries
- 1 tablespoon avocado oil
- 2 teaspoon sugar
- juice from half a lime
- Bring a small saucepan with avocado oil to medium heat. Add the raspberries and cook until they're broken down and bubbling (about 5-7 minutes). Add the sugar and lime juice, cook for another 2 minutes. Remove from heat and allow to cool.
- Arrange the salad toppings over the bed of spinach and serve with 2 tablespoon of the cooled raspberry lime dressing
