Sugar Cookie Dough Ingredients

This easy Christmas cookie recipe requires pantry staples, and if you are vegan a simple egg substitute. Here's what you'll need:

  • Flax Seed Meal or Eggs: For a vegan sugar cookie, you can mix flax seed meal with hot water as an egg substitute. If you are not vegan, you can just use one regular egg.
  • Butter: Vegan butter adds flavor and moisture for a tender crumb. We love the brands Earth Balance or Country Crock Plant Butter. If you are not vegan, regular butter works well.
  • Sugar: Regular organic cane sugar works great here to get a classic cookie taste.
  • Milk: Any variety of milk will do well. If you want a vegan sugar cookie, then we recommend using almond milk or oat milk.
  • Vanilla: Vanilla is added for flavor.
  • Baking Powder: Baking powder helps the cookie rise and ensures proper baking.
  • Salt: Salt is added for flavor, in order to balance out the sweetness of the cookie.
  • Flour: All purpose flour works great here, however, if you want a gluten-free cookie you can just gluten-free flour. We love the brand King Arthur Measure for Measure.
  • Sprinkles: All of the Christmas sprinkles that you desire can be added on top of the sugar cookies or even mixed into the dough!

For the Cookie Frosting

  • Powdered Sugar: This is for the classic sweetness that frosting lends.
  • Milk: Use any regular or plant-based milk you would like here.
  • Butter: Vegan butter or regular butter are great for this frosting.
  • Vanilla: For added flavor, we add vanilla.

Instructions

To make vegan sugar cookies, you just need a large mixing bowl, baking sheet and optional hand mixer for the frosting! Here's the simple process:

flax seed meal

Step 1: Preheat the oven to 375 F. To prepare the flax eggs, mix the flax seed meal and hot water together and let sit for 2 minutes until a gel forms. If you are not vegan, you can use one egg to replace two flax eggs.

Step 2: In a mixing bowl, mix the melted butter, sugar, 2 flax eggs, vanilla, baking powder, milk, and salt. Then, add in the flour until a thick vegan sugar cookie dough forms. You can fold the sprinkles into the dough at this point if you want a colorful cookie dough.

Then, bake for 8-9 minutes (for softer cookies) or 10-11 minutes (for more firm cookies). The sugar cookies will be lightly golden on the bottom and around the edges.

frosting

Step 4: Using a hand mixer, combine all of the frosting ingredients together in a bowl. Spread over the cookies once they have cooled completely. Sprinkles the tops with Christmas sprinkles and enjoy! ps: These cookies are also delicious without frosting!

Expert Tips

  • Swap butter for vegan alternative: For a vegan replacement of butter, you can use vegan butter or just use coconut oil! Most people have coconut oil on hand, so this is a great alternative. If you are using coconut oil, add a pinch more salt to the recipe to balance out the flavors.
  • Room Temperature Ingredients: Be sure to use room temperature milk, vegan butter, or coconut oil to ensure the cookie dough baked evenly.
  • Don't Over Bake: This tip goes for any type of cookie you ever bake. The cookies aren't going to look done when it is time to take them out of the oven. Take them out when you are set and are slightly colored around the edges. They will harden up as they cool.
  • Make The Sugar Cookies Festive: If you would like, you can make these vegan Christmas sprinkle sugar cookies even more festive by adding color to the frosting! Just make sure the food coloring you choose is vegan if you want to keep this recipe all vegan. You can make red and green cookies and top them with the sprinkles as well.

Frequently Asked Questions

Can I make this cookie dough ahead of time and freeze?

Absolutely! Just like with most cookie doughs, you can make the dough, separate them out into small balls and then freeze them in an airtight container until you are ready to bake. You don't have to thaw the cookie dough prior to baking.

Can I create different shapes with the dough?

Definitely. If you want the cookies to be different shapes instead of just circles, you can refrigerate the dough for 30 minutes, roll out the dough onto a floured surface, and use cookie cutters to cut out your favorite shapes!
