Vegan Oatmeal Gingerbread Loaf

Ingredients
Vegan Oatmeal Gingerbread Loaf
- 1 ¼ cup unsweetened almond or oat milk
- ¼ cup melted vegan butter
- ½ cup molasses
- ½ cup sugar
- 1 teaspoon vanilla
- 1 ½ teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- ¼ teaspoon nutmeg
- ¼ teaspoon cloves
- 1 ¾ cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
- 1 cup quick oats
Vegan Vanilla Icing
- 1 ½ cup powdered sugar
- 2 tablespoon softened vegan butter
- 1 tablespoon unsweetened almond or oat milk
- 1 teaspoon vanilla
Vegan Cream Cheese Icing
- 1 ½ cup powdered sugar
- 4 oz vegan cream cheese
- 4 tablespoon softened vegan butter
Instructions
Vegan Oatmeal Gingerbread Loaf
- Preheat the oven to 375
- In a large mixing bowl, mix the almond milk, melted vegan butter, molasses, sugar, vanilla, baking powder, baking soda, cinnamon, ginger, nutmeg, and cloves together until combined. Add the flour and oats and milk until a batter forms.
- Pour the batter into a greased 9x11 inch loaf pan. Bake for 40-45 minutes or until you can stick a toothpick down the middle and it comes out clean.
- While the loaf is baking, if you're icing your loaf - use an electric hand mixer to mix your icing ingredients (your choice of vanilla icing or cream cheese icing)! Allow the loaf to cool for about 10 minutes and then spread the icing over the loaf. Enjoy!
