These vegan homemade Strawberry Pop Tarts have a sweet, perfectly flaky crust, are filled with strawberry jam, iced with a simple strawberry glaze and topped with sprinkles. This copycat recipe is easy to make and SO much more delicious than the store-bought version!

Ingredients needed
This pop tarts recipe keeps it simple using pantry staple ingredients to create a delicious morning treat, snack or after dinner dessert! Here's everything you'll need:
- Milk: To keep these vegan, we're using almond or oat milk to make the pastry.
- Butter: For vegan pastries with a nice flaky crust, use plant-based butter.
- Maple syrup: Adds a touch of sweetness to the crust.
- Vanilla extract: For flavor.
- Baking powder: To help the pastry dough cook properly.
- Flour: Use regular or gluten free all purpose flour. If gluten-free, we recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
- Yogurt: A dairy-free yogurt will help to bind all of the dough ingredients together.
- Strawberry jam: For the strawberry filling.
- For the glaze: The simple strawberry glaze is made with a combination of strawberry jam, powdered sugar and oat or almond milk.
How to make this recipe
- Prepare the vegan pop tart dough by mixing the oat milk, melted vegan butter, maple syrup, vanilla extract, and baking powder together. Then, add the regular all-purpose flour and mix until a thick dough forms. If making your pop tarts gluten free, scoop 2 tablespoon of non dairy yogurt into the dough and work it in using your hands. This will help the dough stick together more and be more elastic when rolling.
Assembling the Pop Tarts
- Transfer half of the dough onto a sheet of parchment paper that has been sprinkled with flour. Use a floured rolling pin to roll the dough into a ¼ to ⅓ inch thick rectangular slab. You may need to use your hands to help form the dough into a rectangle.
- Slice the rectangle into about 10 small rectangles and place them onto a baking sheet lined with parchment paper. Drop a heaping tablespoon of the strawberry jam into the center of 10 of the rectangles.
- Return to the other half of the dough and transfer it onto a clean sheet of parchment paper that was been sprinkled with flour. Use a floured rolling pin to roll the dough into a ¼ inch to ⅓ inch thick rectangular slab. You may need to use your hands to form it into a rectangle.
- Slice the rectangle into 10 smaller rectangles. Please each remaining rectangle of dough on top of the ones that are on the baking sheet and topped with jam. Use a fork to press down around the edges to create a pop tart shape. You should have 10-12 pop tarts.
- Use a knife or fork to pierce the tops to create a couple of air vents. Option to brush the tops with melted vegan butter.
Baking & Serving
- Bake for 15-20 minutes or until the pop tarts are golden. Option to broil them for 1 minute at the end to add more color.
- While they are baking, you have the option to make the strawberry glaze by using a whisk to whisk together the strawberry jam, powdered sugar, and almond milk. Alternatively, you may use an electric hand mixer to make the vegan vanilla frosting by mixing together the almond milk, melted vegan butter, vanilla, and powdered sugar. You can also enjoy these plain. They're delicious!
- Allow the pop tarts to cool before drizzling each with either the vegan strawberry glaze or vanilla frosting. Top with sprinkles. Enjoy!
Expert tips
- Don't over fill these. Be sure not to add too much jam to the center, so it doesn't seep out while baking.
- Press the edges tightly closed. For best results, use a fork to press the edges together. This will help prevent the strawberry jam from seeping out.

We don't recommend reheating homemade pop tarts in the toaster. The glaze is likely to melt and make quite a mess in your toaster. If you'd like to eat these warm, reheat them for a few minutes in a hot oven, and then serve the glaze on the side for dipping. Glazing hot pop tarts will cause the glaze to soak right into the pastry, making it soggy.
Yes! Unbaked, assembled pop tarts can be frozen on a baking tray until solid, then transferred to a ziptop bag or airtight container for up to a month. Thaw in the fridge for an hour or so before baking, cooling and glazing. You can also freeze baked, cooled and unglazed pop tarts in an airtight container or ziptop bag for up to a month. Simply thaw at room temperature for an hour, then reheat in the oven for a few minutes or until crisp again, then cool, glaze and serve.
Storage recommendations
Store strawberry pop tarts in an airtight container at room temperature for up to three days. They will keep a day or two past that, but they won’t be as flaky and delicious past three days.
