You’re going to want to stop everything you’re doing and try this vegan cornbread today! It’s the perfect comfort food that everyone in your home will love. My favorite part about this vegan cornbread is that you only need one bowl and 8 or 9 simple ingredients to make it. I bet you already have everything you need on hand! Things like canned corn, cornmeal, and regular all purpose flour. My trick to making this cornbread texture so pillowy soft is the canned coconut milk (don’t worry, you wont even taste it!) The nutritional yeast is an optional add-in that gives it a cheesy flavor. The batter whips up in about 5 minutes and the result is a rich, super moist, and tender loaf of vegan cornbread that everyone in your home will devour! No one will believe this is vegan and gluten free (optional) and everyone will love it!
I love enjoying my slice spread with softened vegan butter and drizzled with maple syrup.
Here are a few tips for baking this delicious vegan cornbread!
Use a metal pan like this one to bake. Metal bakes loaves more evenly than glass.
I’ve also baked this in a casserole dish. The trick here is to bake the vegan cornbread for less time (about 25-30 minutes or until golden around the edges)!
Feel free to use regular or gluten free all purpose flour in this recipe.
