Vegan Chocolate Chip Pancakes
These vegan chocolate chip pancakes are divine! They're golden and crisp on the outside and fluffy and chocolatey on the inside. You only need about 20 minutes and 7 simple ingredients. They can be made gluten free too! Your family is going to love this breakfast stack. Top with maple syrup and enjoy!
Ingredients
Vegan Chocolate Chip Pancakes
- 1 ripe mashed banana
- 1 cup unsweetened oat or almond milk
- 1 tablespoon maple syrup
- 2 teaspoon baking powder
- 1 teaspoon vanilla
- 1 cup all purpose flour or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
- ¼ cup chocolate chips
Instructions
Vegan Chocolate Chip Pancakes
- Heat a large skillet to medium low heat
- In one bowl, mix the mashed banana, baking powder, almond or oat milk, vanilla, and maple syrup. Then, add the flour and whisk until combined.
- Spray the pan or use a little Vegan butter or oil to grease it. Use a tablespoon to drop the 1 heaping tablespoon of batter per pancake. Sprinkle in the chocolate chips and fry until bubbles form on the top (about 2-3 minutes), flip. It should be golden! Repeat until all the batter is used. Makes about 16 pancakes.
