Vegan Cinnamon Baked Oatmeal Muffins

Ingredients
Vegan Cinnamon Baked Oatmeal Muffins
- 1 ½ cup unsweetened oat or almond milk
- 2 flax eggs
- ½ cup maple syrup
- ¼ cup melted vegan butter
- 1 ½ teaspoon cinnamon
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 2 cup quick oats
Vegan Cream Cheese Icing
- ¾ cup powdered sugar
- 2 tablespoon softened vegan butter
- 2 oz vegan cream cheese
Instructions
Vegan Cinnamon Roll Baked Oatmeal Muffins
- Preheat the oven to 375. Prepare your flax eggs by mixing 2 tablespoon of flaxseed meal with 4 tablespoon of warm water.
- In a large bowl, mix the almond or oat milk, maple syrup, vegan butter, cinnamon, vanilla, and baking powder. Add the flax egg and mix. Then, add the quick oats and mix until a batter forms.
- Pour the batter into 9 lined muffin cups and bake for 30-35 minutes.
- While the muffins are baking, use a hand mixer to mix the icing ingredients together. Drizzle it over the warm muffins.

Can you substitute flax eggs for regular eggs here?

I don't bake with eggs so I can't say for certain. If I was going to use eggs I would only use one.
