Ingredients
  

Vegan Maple Muffins

  • ¾ cup almond milk
  • cup melted vegan butter
  • ½ cup maple syrup
  • 2 flax eggs
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • 2 teaspoon baking powder
  • 1 ½ cup oat flour
  • 1 cup quick oats

Optional Additional Ingredients

  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup diced walnuts or berries

Instructions
 

Vegan Maple Muffins

  • Preheat oven to 375
  • In a medium mixing bowl, mix together the almond milk, maple syrup, vegan butter, flax eggs, cinnamon, baking soda, and baking powder.
  • Stir in the oats and oat flour and pour the batter into 8 lined muffin cups. I like to spray my muffin liners with a little baking spray to keep them from sticking.
  • Bake for 20 minutes!

    Is there something I can use instead of vegan butter? Will coconut oil work?

    These are great. I added 1/4 tsp of ground clove and used coconut oil instead of vegan butter.
