Vegan Maple Oatmeal Breakfast Muffins
Ingredients
Vegan Maple Muffins
- ¾ cup almond milk
- ⅓ cup melted vegan butter
- ½ cup maple syrup
- 2 flax eggs
- 1 teaspoon cinnamon
- ½ teaspoon baking soda
- 2 teaspoon baking powder
- 1 ½ cup oat flour
- 1 cup quick oats
Optional Additional Ingredients
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- ¼ cup diced walnuts or berries
Instructions
Vegan Maple Muffins
- Preheat oven to 375
- In a medium mixing bowl, mix together the almond milk, maple syrup, vegan butter, flax eggs, cinnamon, baking soda, and baking powder.
- Stir in the oats and oat flour and pour the batter into 8 lined muffin cups. I like to spray my muffin liners with a little baking spray to keep them from sticking.
- Bake for 20 minutes!
