Preheat the oven to 350 degrees. Spray a 9x11 inch casserole dish with olive oil spray.

In a large mixing bowl, mix together the cooked rice, chickpeas, coconut milk, broccoli, onions, and tomatoes. In a smaller separate bowl, add the spices and mix. Pour the spices over the chickpeas and rice mixture and stir until evenly coated.

Transfer the chickpeas and rice mixture into the casserole dish and bake in the oven for 35-40 minutes. It should be lightly golden. Top with fresh parsley and enjoy warm. This dish also makes a great make-ahead meal and reheats well in the microwave!
