How To Make Flax Eggs

Step 3: Set aside for about 2 minutes or until a thick gel forms.
How To Make Sugar Cookie Oatmeal Bars
Step 1: Grease your small 7 or 8 inch baking dish and preheat the oven to 375. Prepare your flax eggs.
Step 2: In a medium bowl, mix the melted vegan butter, almond or oat milk, sugar, vanilla, salt, baking powder, and flax eggs together. Add the flour and oats and mix until a thick batter forms.
Step 3: Pour the batter into the greased baking dish and bake until golden.
Step 4: Make the vegan cream cheese frosting by mixing the softened vegan butter, vegan cream cheese, and powdered sugar together.

- ½ cup quick oats
Vegan Cream Cheese Frosting
- ¾ cup powdered sugar or purecane sugar free powdered sugar substitute
- 2 tablespoon softened or melted vegan butter
- 2 tablespoon softened vegan cream cheese frosting
- vegan sprinkles optional
Instructions

- Preheat the oven to 375. Grease a small 7-8 inch baking dish with non stick baking spray.
- Prepare the flax eggs by mixing the flax seed meal and warm water together. Set aside for about 2 minutes until a gel forms.
- In a medium sized mixing bowl, mix the melted vegan butter, almond milk, sugar, baking powder, vanilla, and salt together. Add the flax eggs and mix well. Add the flour and oats and mix until a thick cookie dough forms.
- Transfer the oatmeal cookie dough into the greased baking dish and bake in the oven for 25 minutes or until golden around the edges.
- To make the vegan cream cheese frosting, mix the powdered sugar, vegan cream cheese, and vegan butter together.
- When the oatmeal bars are done baking, allow them to cool and then cut them into 12 small bars. You have the option to serve them on their own or with vegan cream cheese frosting and sprinkles. I love them served warm with a cold glass of oat milk! Enjoy!
