Ingredients
  

100 Calorie Oat Flour Pumpkin Muffins

  • 1 ¼ cup unsweetened almond or oat milk
  • 1 13 ounce can of pumpkin puree
  • ¼ cup melted vegan butter or coconut oil
  • ¼ cup coconut sugar
  • 4 tablespoon monk fruit sweetener
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • teaspoon cloves
  • 1 teaspoon apple cider vinegar
  • 2 cup oat flour

Instructions
 

100 Calorie Oat Flour Pumpkin Muffins

  • Preheat the oven to 350
  • In a large mixing bowl, mix the oat or almond milk, pumpkin puree, melted butter/coconut oil, coconut sugar and monk fruit sweetener, vanilla, baking powder, baking soda, cinnamon, nutmeg, cloves, and apple cider vinegar. Mix until combined and then stir in the oat flour until a smooth batter forms.
  • Pour the batter into 14-16 lined muffin molds. I like to spray my muffin molds with cooking spray so they don't stick. Bake in the oven for 30 minutes until the tops of the muffins are are golden and crackled. Option to sprinkle a little sugar on top and enjoy warm.

      I would recommend using my pumpkin muffin recipe that uses regular or gluten free all purpose flour 🙂 They are quite tasty!

      Hi Leslie! I think that would work. Perhaps 1/2 a cup?
