Matcha Green Tea Sugar Cookie Instructions
Step 1: Preheat the oven. Line a baking sheet with parchment paper. In a small bowl, mix the ground flax seed with the warm water and set aside until a thick gel forms (about 2 minutes).
Step 2: In a medium mixing bowl, mix the melted vegan butter, sugar or purecane, milk, vanilla, baking powder, salt, and matcha together until smooth. Add the flax eggs and mix. Then, add the flour and mix until a thick cookie dough forms.
Step 3: Scoop out about 2 tablespoon of cookie dough per cookie and place it onto the lined baking sheet. Use your hands to gently form the cookies into balls. Bake in the oven for about 10-12 minutes or until the green tea cookies are golden around the edges.
Step 4: Before serving, you have the option to whip up the vegan cream cheese frosting to drizzle over the cookies. They also taste amazing on their own. To make the vegan cream cheese frosting, use an electric hand mixer to mix the softened or melted vegan butter, vegan cream cheese, and powdered sugar together until a smooth frosting is formed. - 2 oz vegan cream cheese

- Preheat the oven to 425. Line a baking sheet with parchment paper.
- Prepare the flax eggs by mixing the flax seed meal (ground flax seeds) and warm water together in a small bowl. Let this sit for 2 minutes until a thick gel forms.
- In a medium mixing bowl, add the melted vegan butter, almond or oat milk, matcha powder, purecane or sugar, salt, vanilla, flax eggs, and baking powder together. Once the mixture is smooth, add the flour and mix until a thick a thick cookie dough forms.
- Use a spoon to scoop out about 2 tablespoon of cookie dough per cookie and gently form it into a loose ball. Place the cookie dough onto the lined baking and bake in the oven for 10 minutes or until the edges of the cookies are golden and they lift easily off of the paper.
- Use a spatula to remove each cookie from the baking sheet and allow them to cool on a wire rack. While the cookies cool, use an electric hand mixer to mix the powdered sugar, softened or melted vegan butter, and vegan cream cheese - until a creamy vegan cream cheese icing is formed. If the icing is too thick to drizzle, heat it in the microwave for 7-10 seconds. Drizzle the icing over the warm cookies and enjoy!
