Let's combine the delicious flavors of a cinnamon roll with comforting baked oatmeal. Top it with vegan cream cheese for a truly special treat!
Preheat the oven to 375. Prepare your flax egg by mixing 2 tbsp of flaxseed meal with 4 tbsp of warm water.
In a large bowl, mix the almond or oat milk, maple syrup, vegan butter, cinnamon, vanilla, and baking powder. Add the flax egg and mix. Then, add the quick oats and mix until a batter forms.
Pour the batter into a 9x11 casserole dish and bake for about 35 minutes until the oats are golden and your kitchen smells amazing!
While the oats are baking, use an electric hand mixer to mix the icing ingredients together. Spread the icing over top of the oats once they've cooled and enjoy!

Posted on: May 18, 2020Absolutely delicious and tastes like a cinnamon roll! I prepped it last night and put it in the fridge to bake this morning. I used an 8 x 8 pan, and it baked perfectly. I also used the icing recipe from your maple cinnamon rolls because I didn’t have any cream cheese. I’m so glad I randomly discovered you on Instagram! I can’t wait to try more of your recipes.

Posted on: May 18, 2020Can you substitute the flax eggs for regular eggs and if so, would that change the baking time?
Jillian Glenn
Posted on: May 18, 2020Hi there ! I would just use one regular egg in this recipe and bake for the same amount of time!

Posted on: May 18, 2020Hi this looks delicious! Do you think regular oats would work instead of quick oats???
Jillian Glenn
Posted on: May 18, 2020Hi Tanya! I recommend quick oats in this recipe as they give the baked oatmeal a fluffier texture! Hope this helps!

Posted on: May 18, 2020Absolutely Amazing! I’m sitting here eating it for dessert after dinner. I substituted the powdered sugar for monkfruit powdered sugar because my husband is a diabetic. Thank you for healthy and tasty foods.
