We make these in my family for special occasions, or just when we're craving an indulgent and chocolatey vegan dessert. Everyone who tries them loves them and no one believes that these Brookies are both vegan and gluten-free friendly.
Vegan Brookies Ingredients
- Butter: No chocolate chip cookie or brownie is complete without butter! Since we are making vegan brookies, I recommend using vegan butter in the chocolate chip cookie dough and brownie batter. If you are not vegan or dairy-free, you can use regular butter.
- Milk: I recommend using any unsweetened plant-based milk in this brookie recipe. I prefer either unsweetened almond milk or oat milk.
- Sugar: To sweeten the vegan brookies, I recommend using organic cane sugar.
- Vanilla Extract: Vanilla extract enhances the flavor of the cookie dough and brownie batter.
- Salt: Salt enhances the sweetness of the vegan brookies.
- Baking Powder: Since this is a vegan brookie recipe, instead of using eggs, we just use baking powder and flax eggs to help bind and rise our dough.

How To Make Vegan Brookies
Step 1: Preheat the oven and grease a metal or ceramic baking dish. I used this metal 9-inch square baking pan but you can also use a 9x11 rectangular baking dish. Prepare the flax eggs for the chocolate chip cookie dough by mixing the flax seed meal with the warm water. Set aside until a gel forms.
Step 2: We will start by making our brownie batter. Mix the melted vegan butter, non dairy milk, sugar, vanilla, salt, baking powder, and cocoa powder together until a smooth consistency forms. Add flour and mix until a brownie batter forms.
Step 3: Fold in the vegan chocolate chips and set aside.
Step 4: Prepare the vegan chocolate chip cookie dough by mixing the flax eggs, sugar, melted vegan butter, salt, vanilla, and baking powder together. Then, add the flour and mix until a thick cookie dough forms.
Step 5: Fold in the chocolate chips. Then, begin to scoop a heaping tablespoon of the cookie dough and then a heaping tablespoon of the brownie batter into the dish. Repeat until you have used all the brownie batter and cookie dough.
Step 6: Bake in the oven until the vegan brookies are golden. Allow the brookies to cool before cutting them squares and serve warm.

- Preheat the oven to 375
- Begin by preparing the brownie batter. Mix the melted vegan butter, non dairy milk, sugar, salt, vanilla, baking powder, and cocoa powder together. Once the mixture is smooth, add the flour and mix. Fold in the chocolate chips. Set aside
- Next, make the chocolate chip cookie dough. Mix the flax seed meal and warm water together in a small bowl. Set aside for 2 minutes. Then, mix it with the sugar, melted vegan butter, salt, vanilla, and baking power. Mix in the flour until a thick cookie dough is formed. Fold in the chocolate chips.
- Using a large spoon, scoop one scoop of the brownie batter into a greased 9x11 casserole dish. Then, scoop one scoop of cookie dough. Repeat until all of the brownie batter and cookie dough is in the dish. Use a silicone spatula to press it down and make sure it's even across the top.
- Bake for 30-40 minutes or until the cookie dough is golden and the brownies are crisp around the edges. Allow the dish to cool completely before slicing and serving.

I baked for 35 minutes and they were very well done - not at all gooey like in the pictures. Followed recipe to a T and really wanted the gooey! I'm assuming I need to way cut back on cook time? I used a 9 x 13 glass dish. I want to attempt again this weekend!
