- 1 cup puréed strawberries (about 2 cups fresh or frozen strawberries before blending)

Step 1: Prepare the Donut Batter
- Preheat your oven to 350°F (175°C). Grease 14-16 silicone donut molds or a metal donut pan with non-stick spray.
- In a large mixing bowl, whisk together almond milk, melted vegan butter, sugar, baking powder, baking soda, and vanilla extract.
- Add the flour and mix until a smooth batter forms. (Do not overmix.)
- If using, gently fold in the diced fresh or frozen strawberries.
- Spoon the batter evenly into the donut molds, filling each about ¾ full.

Step 2: Bake the Donuts
- Bake in the preheated oven for 25 minutes or until the donuts have risen and are golden.
- Remove from the oven and allow them to cool in the molds for 5 minutes, then transfer to a cooling rack.

Step 3: Make the Strawberry Frosting
- In a small saucepan, heat 2 cups of strawberries over medium-low heat, stirring frequently until softened (about 5 minutes).
- Use an immersion blender (or regular blender) to blend into a smooth purée.
- In a mixing bowl, whisk together 1 cup of the strawberry purée, softened vegan butter, lemon juice, and powdered sugar until smooth. Add more powdered sugar if a thicker frosting is desired.

Step 4: Frost the Donuts
- Once the donuts are completely cool, spoon the strawberry frosting over each donut. Let it set for a few minutes before serving.

Strawberry Frosting
- ¼ cup softened vegan butter regular butter also works
- 1 cup puréed strawberries
- 1 ½ cups powdered sugar
- 1 teaspoon lemon juice
Instructions

- Preheat the oven to 350
- Mix the almond milk, melted vegan butter, sugar, baking powder, baking soda, an vanilla together. Then, mix in the flour until the batter is smooth. Option to fold in diced fresh or frozen strawberries into the batter. Spoon the batter into 14-16 greased silicon donut molds and bake for 25 minutes.
- While the donuts are baking, add about 2 cups of strawberries into a small saucepan and heat them over medium/low heat until they're completely broken down (about 5 minutes). Stir frequently. Alternatively, you can microwave them for about 45 seconds.
- Once the strawberries have broken down, use a blender to blend the berries. Measure out 1 cup of the strawberry purée and then, use a whisk or electric mixer to mix in the softened butter, lemon juice, and 1 ½ cups of powdered sugar (adding more as needed for a thicker frosting). Set aside until the donuts are ready to frost.
- Allow the donuts to cool and then spoon the frosting over top. You will have leftover frosting so feel free to freeze for 30 days. Enjoy!

I loved these donuts! But when I stored them in the fridge the donuts became very hard and the frosting soaked through the donuts and basically disappeared! Any suggestions? Should I store them just room temperature?
