20-Minute Vegan Almond Flour Sugar Cookies
Ingredients
Vegan Almond Flour Sugar Cookies
- ¼ cup hot water
- 6 tablespoon flax seed meal
- 6 tablespoon melted vegan butter
- ¼ cup unsweetened oat or almond milk
- ¾ cup coconut or cane sugar
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 2 cup almond flour
Instructions
Vegan Almond Flour Sugar Cookies
- Preheat the oven to 375
- Prepare the flax seed meal mixture by mixing together the hot water and flax seed meal together. Set aside until a thick paste forms.
- Mix the flax seed meal mixture with the melted vegan butter, almond or oat milk, sugar, baking powder, vanilla, cinnamon, and salt. Then, add the almond flour and mix until a thick cookie dough forms.
- Scoop one heaping tablespoon of cookie dough out and lay it onto a baking sheet lined with parchment paper. Allow about 2 inches between the cookies. Bake in the oven for 15 minutes or until the cookies are lightly golden and lift easily off of the baking sheet.
