If you love baked oatmeal, you've got to try this delicious Apple Cinnamon Baked Oatmeal recipe. It's made in minutes, it's vegan, gluten-free, and tastes like autumn! Everyone will love this recipe and you won't mind making it because of how simple and easy it is!

Apple Cinnamon Baked Oatmeal Ingredients
- Applesauce: To give this healthy apple cinnamon baked oatmeal a nice apple flavor, we recommend using plain unsweetened applesauce.
- Milk: To keep this recipe vegan, we recommend using regular unsweetened almond or oat milk. If you are not vegan or dairy-free, regular milk will work.
- Maple Syrup: 100% pure maple syrup is used to naturally sweeten our apple cinnamon baked oatmeal.
- Butter: To keep this recipe dairy-free, we recommend using melted vegan butter. If you are not vegan or dairy-free, regular butter will work. You may also use melted coconut oil but be sure to add a pinch of salt to the mixture since coconut oil is sweeter than butter.
- Baking Powder: Helps our oats get nice and fluffy.
- Vanilla: For an added rich flavor.
- Cinnamon: Pairs perfectly with apples and gives us a nice warm flavor.
- Flax Seed Meal: Added nutrients and makes the oatmeal more filling.
- Oats: We recommend using quick oats instead of old fashioned rolled oats to create a fluffy and light texture for the apple cinnamon baked oatmeal.
- Apple Slices: For topping over the oatmeal and added apple flavor!
How To Make Apple Cinnamon Baked Oatmeal
Step 1: Preheat the oven. In a small bowl, mix the flax seed meal and warm water together to make the flax eggs. Set aside for two minutes or until a gel forms.
Step 2: Mix the applesauce, almond milk, melted vegan butter, maple syrup, flax eggs, vanilla, cinnamon, and baking powder together. Add the oats and mix until a batter forms. Pour the batter into a greased baking dish. Top with apple slices.
Step 3: Bake in the oven for 30-35 minutes. While it bakes, you have the option to make vanilla frosting to drizzle on top. Mix the almond milk, powdered sugar, vanilla, and vegan butter (measurements below) together. Drizzle the vanilla icing over the loaf and enjoy warm.

Delicious! Thank you for this recipe. We are not vegan in our house so I used normal milk and eggs but it came out perfectly. Looking forward to trying more of your recipes!

It's great to hear that it worked with non vegan ingredients as well! Did you use one egg or two?

Thanks for this recipe! About how many cups is 1/9 serving?
Jillian says
Hi Stephanie! I usually just section it into 9 even pieces. Each serving will probably be about 1/2-2/3 cup prepared.

I have this in the oven now and can't wait to taste it! I'm hoping the 1/4c of butter or oil mixed into the oatmeal with the other ingredients, as I don't see it listed in the directions.

Thank you for pointing this out! Yes, it is mixed in! I will update the recipe 🙂
